Hope you are having a delish weekend. I am taking a quick break from weekend work to share with you my most favorite, ultra tasty packed lunch this week:
The exciting fresh flavors and variety of textures made me totally fall in love. Definitely ate this more than once this week.
I grilled up a few chicken breasts last weekend to have on hand for lunches and I threw this tasty treat together. It was super quick and easy to boot!
chicken lime avocado mint pomegranate salad:
4 oz grilled chicken breast, chopped (I grilled on George Foreman)
1 cup baby spinach, washed and chopped or torn
3/4 cup cherry tomatoes, halved
1/4 large or 1/2 small avocado
1/3 cup pomegranate seeds (ready to go seeds sold at TJ’s)
1 tbsp chopped fresh mint leaves
2 lime slices
Place all of this goodness in your to-go container. When ready to eat, squeeze juice of 1-2 lime wedges all over salad, put lid on top and shake it all up!
It’s all sorts of tasty amazingness in your mouth.
(p.s., squeeze lime on the avocado before storing it in the fridge to limit browning.)
